DESCRIPTION
American Wagyu hot dogs carry deeper beef flavor and richer texture than standard franks, especially when blistered over live fire until the casing crisps and snaps. Sweet caramelized onions and smoky bacon jam amplify the richness while still letting the beef remain the star.

- 1 lb American Wagyu Beef Hot Dogs
- 4 brioche hot dog buns
- Kosher salt
- Fresh cracked black pepper
Bacon Jam
- 6 strips bacon, diced
- 1 yellow onion, thinly sliced
- 1 tbsp brown sugar
- 1 tbsp apple cider vinegar
For Serving
- Yellow mustard
- Chives, finely sliced
RECIPE
Process
- Heat skillet over medium heat and cook diced bacon until crisp. Remove bacon and reserve 1 tbsp rendered fat.
- Add onions to skillet and cook 15–20 minutes until deeply caramelized.
- Stir in brown sugar, apple cider vinegar, and cooked bacon. Simmer 2–3 minutes until jammy.
- Preheat grill to medium-high heat (425–500°F).
- Grill hot dogs 5–7 minutes, turning frequently until evenly blistered and heated through.
- Toast brioche buns lightly on the grill.
- Build hot dogs with mustard, bacon jam, and fresh chives.
- Serve immediately while hot and crisp.
