  • 1 package Nueske’s Wild Cherrywood Smoked Bacon (12 oz)
  • Kosher salt
  • Fresh cracked black pepper

Breakfast Tacos

  • 8 corn tortillas
  • 4 eggs
  • 2 Yukon Gold potatoes, diced small
  • 1 avocado, sliced
  • 1/2 cup cilantro
  • 1 jalapeño, thinly sliced
  • 1 lime, cut into wedges
  • Hot sauce for serving
RECIPE

Process

  1. Heat cast iron skillet over medium heat.
  2. Cook bacon 3–5 minutes per side until deeply crisp. Transfer to paper towels and reserve 2 tbsp bacon fat in skillet.
  3. Add diced potatoes to skillet and cook in bacon fat for 12–15 minutes until crisp and golden. Season lightly with salt and pepper.
  4. Whisk eggs and scramble gently over medium-low heat until soft and creamy.
  5. Warm tortillas directly over flame or skillet.
  6. Chop bacon into bite-sized pieces.
  7. Build tacos with potatoes, eggs, bacon, avocado, cilantro, and jalapeño.
  8. Finish with lime juice and hot sauce before serving.
