California Lemon Pepper Wings with Charred Scallion Ranch

- 1 package Chicken Wings (1.5 lb)
- Kosher salt
- 2 tbsp coarse black pepper
- 2 tsp lemon zest
- 1 tbsp avocado oil
Charred Scallion Ranch
- 1/2 cup sour cream
- 1/4 cup mayo
- 2 scallions
- 1 tbsp chives, finely sliced
- 1 tsp lemon juice
- Kosher salt to taste
RECIPE
Process
- Preheat grill for two-zone cooking at medium-high heat (400–450°F).
- Pat wings completely dry and toss with avocado oil, kosher salt, black pepper, and lemon zest.
- Grill scallions until lightly charred. Finely chop and mix with sour cream, mayo, chives, lemon juice, and salt. Refrigerate until needed.
- Place wings over indirect heat and cook 20–25 minutes, turning occasionally.
- Move wings directly over high heat and grill 2–3 minutes per side until skin crisps and lightly chars.
- Cook until internal temperature reaches 175–185°F for optimal tenderness.
- Toss wings lightly with additional lemon zest and black pepper before serving.
- Serve hot with charred scallion ranch.
