Lemon Sole belongs to the Pleuronectidae family, also known as right-eye flounders. These fish lie on the sea bottom on their left sides, with both eyes on their right sides.
Their cousins, the Paralichthyidae, are the opposite, with eyes on the left. A few species, like those in the genus Platichthys, can even have eyes on either side — just one of the many fascinating quirks of the flatfish world. Our Lemon Sole is wild-caught from the rich, cold waters off Georges Bank, one of the most productive and respected fishing grounds in North America.
