Cooking it the right way

Cook over high heat (450–650°F) in a cast iron pan or directly over flame to properly render the marbling and build a deep crust. Pull at 130–135°F for medium-rare and rest 5–10 minutes before slicing. Ribeye performs best when the fat fully renders, giving you a rich, buttery center with crisp, caramelized edges
